Fat, Oil & Grease Management

Complete FOG management for commercial kitchens. Scheduled collection, licensed disposal, and the compliance documentation to prove you're doing it right.

What Is FOG and Why Does It Matter?

FOG — fats, oils, and grease — is produced by every commercial kitchen. When it enters the drainage system, it cools, solidifies, and accumulates on pipe walls. Over time, this creates blockages that can affect your premises, neighbouring businesses, and the wider sewer network.

The UK's water companies spend over £100 million a year clearing FOG-related blockages. That's why they're increasingly targeting commercial kitchens with enforcement action — and why having a proper FOG management programme in place is no longer optional.

Fats

Animal fats from meat cooking, butter, lard, and dairy products. Solidify at room temperature and cling to pipe walls.

Oils

Vegetable and cooking oils from frying, sautéing, and food preparation. Mix with water to form emulsions that are hard to remove.

Grease

The combined residue of fats and oils that accumulates in drains, grease traps, and sewer pipes over time.

WHAT WE PROVIDE

Our FOG Management Services

Scheduled Waste Collection

Regular collection of grease trap waste and used cooking oil on a schedule that suits your kitchen. All waste is transported by licensed carriers.

Waste Transfer Notes

Legal documentation for every collection. Waste transfer notes prove your FOG waste was handled correctly by a licensed carrier — essential for compliance.

FOG Management Plans

A documented plan covering your grease management procedures, maintenance schedule, and staff training. Required by many water authorities.

Discharge Consent Support

Help meeting the conditions of your discharge consent. We provide the documentation and evidence water authorities need to see.

The Legal Case for Proper FOG Management

FOG management isn't just good practice — it's a legal requirement. Multiple pieces of legislation apply to commercial kitchens, and the penalties for non-compliance are serious.

FOG entering the sewer is illegal under Section 111 of the Water Industry Act 1991
Fatbergs cost water companies — and ultimately businesses — millions to clear
Water authorities are actively targeting commercial kitchens with enforcement campaigns
Fines for FOG offences are unlimited; serious cases can result in prosecution
Poor FOG management can trigger food hygiene enforcement and kitchen closure
Proper documentation protects you if your premises are ever investigated
